Most cookbooks expect you to put the whole stack inside Docker. Why run Nginx twice?
The container linked below uses SQLite by default, and allows connecting to a separate database during initial startup.

The Nginx cookbook for Nextcloud missed this one, I think? So nice to have web access to contacts and notes!
The only Redis cookbook that worked.
you can switch from sqlite to mysql, and potentially between most two combinations
So, where is the LDAP server? Would the contacts be accessible through CardDAV?

using Rclone with WebDAV

Choice of data centers
I had to edit the PHP code under 3rdparty as described here, just to complete an upgrade.
Simple scheduled rsync/rclone might be enough, for just the Files data, but would that get notes/calendar/contacts?
Would syncing the whole thing and restoring to another URL actually create a working duplicate?
Also to consider is WebDAV mirroring/sync
- davfs2 plus rsync seems like the most active and robust option
- gvfs supports DAV mounting also
- Duplicati can sync to a DAV server, but would use local files as the source. This seems to preclude syncing CalDAV/CardDav data, too.
- rclone is very web-storage aware and can sync to/from a local filesystem as one of the pair
- vdirsyncer can sync CalDAV/CardDav (which should get tasks)
-- seems to be slated for replacement by pimsync
-- releases are hiding at https://git.sr.ht/~whynothugo/pimsync/refs
